Agave Nectar
Agave nectar weighs 336g per cup, nearly as dense as honey. It is about 1.5 times sweeter than sugar, so use less when substituting. To replace 1 cup of sugar, use 2/3 cup agave and reduce other liquids by 1/4 cup. It browns faster than sugar, so lower oven temperature by 25 degrees Fahrenheit. Light agave has a neutral flavor; dark agave has a mild caramel taste. Store at room temperature once opened, or refrigerate for longer life.
