Almond Flour
Almond flour is made from blanched, ground almonds and is naturally gluten-free. At only 96g per cup, it is much lighter than wheat flour. It cannot be substituted 1:1 for wheat flour in most recipes as it lacks gluten structure. Almond flour works best in recipes specifically designed for it, such as French macarons and gluten-free cakes. Keep refrigerated to prevent the natural oils from going rancid.
