Ground cardamom weighs 104g per cup, though typical usage is 1/4 to 1 teaspoon. It is one of the most expensive spices. Green cardamom is sweet and floral, used in Scandinavian baking and Indian chai. Black cardamom is smoky and used in savory dishes. For the freshest flavor, buy whole green pods, crack them, and grind the seeds yourself. Pre-ground cardamom loses its aroma within a few months.
