Cheddar (shredded)
Shredded cheddar weighs about 113g per cup, loosely packed. Pre-shredded cheddar from the store is coated in anti-caking agents (usually cellulose or potato starch) that prevent smooth melting. For sauces and fondues, shred your own from a block. Sharp cheddar has more flavor, so you can use less. One 8-ounce block yields about 2 cups shredded. Store opened shredded cheese in a sealed bag, pressing out air, for up to a week.
