Cocoa Powder
Unsweetened cocoa powder weighs only 86g per cup, making it one of the lightest dry ingredients. Natural cocoa powder and Dutch-process cocoa weigh the same but behave differently in baking. Natural cocoa is acidic and reacts with baking soda. Dutch-process is neutral and works with baking powder. Do not interchange them without adjusting leavening.
