Evaporated Milk
Evaporated milk weighs 252g per cup. It is shelf-stable whole milk with about 60% of the water removed, giving it a slightly caramelized flavor and creamy body. To reconstitute into regular milk, mix equal parts evaporated milk and water. It makes fudge, pumpkin pie, and tres leches cake. Do not confuse with sweetened condensed milk, which contains sugar and weighs much more. Once opened, transfer to a sealed container and refrigerate for up to five days.
