Half and Half
Half and half weighs 242g per cup and is a mix of equal parts whole milk and heavy cream, with about 10-12% fat. It cannot be whipped like heavy cream. In baking, it adds richness without the heaviness of cream. To substitute, mix equal parts whole milk and heavy cream, or use whole milk with a tablespoon of melted butter per cup. Use within a week of opening and always refrigerate.
