Mozzarella (shredded)
Shredded mozzarella weighs about 113g per cup, loosely packed. Low-moisture mozzarella is the standard for pizza and casseroles — it melts evenly and browns well. Fresh mozzarella is much wetter and should not be measured the same way. Like cheddar, pre-shredded bags contain anti-caking agents that affect melting. Shred from a block when smooth melting matters. Freeze shredded mozzarella in a sealed bag for up to three months.
