Parmesan (grated)
Finely grated Parmesan weighs about 100g per cup, but this varies significantly depending on how it is grated. A microplane produces a much fluffier result than the small holes on a box grater. Pre-grated Parmesan from a container packs more densely. For accuracy, always weigh Parmesan. Parmigiano-Reggiano is the authentic Italian version and has a more complex flavor. Store grated Parmesan in the refrigerator and use within a week, or freeze for up to three months.
