Coconut Sugar
Coconut sugar weighs 180g per cup, lighter than regular granulated sugar. Made from evaporated coconut palm sap, it has a caramel-like flavor with no coconut taste. It can replace granulated sugar 1:1 by weight in most recipes, though the slightly lower sweetness and different moisture content may change results slightly. It does not dissolve as readily in cold liquids. Store in a sealed container at room temperature for up to two years.
