Date Sugar
Date sugar weighs 170g per cup and is simply dried, ground dates — not refined sugar. It does not dissolve in liquid or melt, which limits its use in certain recipes. It works well in crumble toppings, oatmeal, and as a dry rub. Because it contains fiber, it clumps easily. Break up clumps before measuring. It burns faster than regular sugar, so watch baking temperatures carefully. Store in a cool, dry place in a sealed container for up to six months.
