Light Corn Syrup
Light corn syrup weighs 328g per cup, same density as dark corn syrup. It has a neutral sweetness without the molasses flavor of dark corn syrup. Essential for pecan pie filling, marshmallows, and candy because it prevents sugar crystallization. Karo is the most common US brand. If unavailable, golden syrup is a reasonable substitute with a slightly different flavor. Store at room temperature; it lasts almost indefinitely once opened.
