Paprika
Paprika weighs 110g per cup. There are three main types: sweet (mild, for color), hot (adds heat), and smoked (deep, smoky flavor). Hungarian paprika is generally considered the best quality. Spanish pimenton is the smoked variety. Paprika loses its flavor faster than most spices — buy in small quantities and replace every six months. Store away from heat and light. Toast paprika briefly in oil to release its flavor before adding other ingredients.
